In the gatehouse of the future hotel Kasteel Gemert, two-Michelin-star chef Soenil Bahadoer opens his new restaurant: GEM. For the interior, Soenil Bahadoer collaborated with Studio Piet Boon, known for its balanced and timeless approach to design. The result is a warm and layered interior where historical architecture, contemporary elegance and culinary excellence come together. The building's character — once the entry point to the castle grounds — sets the tone for a refined and tactile guest experience.

An interior rooted in context and craftsmanship
The interior concept reflects both the natural surroundings of the castle gardens and the personal heritage of the chef. A calm base of neutral tones is enriched with deep natural materials and colours: dark-stained wood, Italian green stone selected by the studio, bronzed metal, and gold-coloured accents. These colours are a hint to the origin and culture of Soenil Bahadoer and refer subtly to themes of new beginnings, good harvest, growth, success, renewal and refinement. All elements are designed with attention to proportion, comfort and detail, from the full natural stone flooring and acoustic ceilings to custom-designed consoles and furniture pieces.
Design that supports the experience
The layout is composed across two floors, with functions flowing naturally: from a central restaurant space and culinary 'theatre' to a wine room, cheese room and chef's table. Rounded layouts and soft silhouettes echo the refined elegance of the space, enhancing both intimacy and flow across the two levels. The furniture layout allows for flexibility in group size and arrangement, while maintaining the integrity of the design. The following pieces from the

A striking lighting object by Studio Molen anchors the spatial design with its sculptural presence, complemented by artworks from Janet Vollebregt, Inge Bečka, Natura Ceramica, and Serge Hautvas.
